Check it out, I’m back and I’ve got a recipe! Whoaaaaa. This is somewhat reminiscent of my Raw Green Coconut Curry from a while back, except this is less saucy and isn’t strictly for curry purposes. I made a little salad bowl situation for lunch this afternoon, but this is seriously green and can be used anywhere you’d use a traditional pesto – on noodles, veggies, tofu, tempeh, beans, bread, dip, pizza, or your face. Mmmmmm.
I was craving cilantro, and somthing seriously fresh tasting this afternoon, so I threw a whole bunch of cilantro and some other bits I had lying around into the food processor and – this! I probably use a different nut or seed or oil every time I make pesto, and I use non-basil herbs or greens more often than not (parsley, spinach, cilantro are my faves), but this is probably my biggest departure yet.
I love cilantro. Love it. In my experience, lots of people who think they hate cilantro just haven’t had it in something delicious and can easily be tricked into eating and enjoying it. It’s one of the most detoxifying green herbs, and since we’re all a little bit obsessed with detoxing at this time of year, I encourage you to give this pesto a try whether you’re a cilantro lover or not!
Thai Cilantro Coconut Pesto
1 small bunch cilantro, rough chop, stems included
juice of 1/2 lime
3 tbsp melted coconut butter
1 tsp salt
2 tbsp hemp seeds
1 clove garlic
1 tsp green curry paste or 1/2 tsp fresh ginger, minced & 1/2 tsp curry powder
To melt coconut butter, place jar in pot or bowl of boiling water until coconut butter melts enough to scoop out of jar.
Combine all ingredients in food processor or blender until well combined in a slightly lumpy past. mmmmmm, lumpy paste.
Toss with veggies, noodles, mix with coconut milk for an even coconuttier(!) curry sauce, or anything else your lil’ heart desires.
I tossed about 3 tbsp of the pesto with a bowl of raw sliced carrots, baby bok choy, red cabbage, white beans, sunflower seeds, green onions and extra cilantro! Om nom nom.
