This could easily be an any-day breakfast, but something about the chocolatey-ness and all the toppings I throw on makes it seem like weekend-morning kid cereal breakfast. But, all grown-up and responsible and stuff because it’s packed with nutrition, like omega 3’s and 6’s from hemp seeds and chia seeds, boatloads of fibre, magnesium, super-healthy coconut fats, complex carbs and complete vegan proteins.
This is basically your basic chia seed pudding, made with a quick homemade hemp milk, and topped with miscellaneous deliciousness. The toppings are optional, and the milk could just as easily be almond, or whatever other non-dairy business you’ve got on hand. I like hemp for it’s high protein content (11g in 2 tbsp, what!) and high essential fatty acid content, aaaand because it’s the fastest homemade milk to whip up. No straining through nut milk bags required, fun as it is to talk about your nut milk bags (but see, we still get to talk about them).
Here’s how this easy little breakfast comes together while you wait for some Saturday morning cartoons to download off Megaupload (because who watches TV on TV anymore?!).
Chocolate Chia Breakfast Pudding (serves 1 or 2, depending on appetite – I’m a hungry hungry hippo in the morning and usually eat this whole batch, which is completely acceptable)
chocolate hemp milk:
1 1/2 cups water
3 tbsp hemp seeds
1 tbsp raw cacao
2-4 tsp agave or maple syrup or a pinch of stevia (to desired sweetness, I prefer it on the lighter side)
or: 1 1/2 cups non-dairy milk of choice
1/4 cup chia seeds
1 banana, sliced
2 tbsp shredded coconut
1 tbsp cacao nibs
walnuts, pumpkin seeds, fresh or frozen berries
To make chocolate hemp milk: Combin first set of ingredients in blender on high until hemp seeds are liqified.
To make pudding: In bowl, combine hemp milk with chia seeds, stirring well. Let sit at least ten minutes, until chia seeds soak up milk and take on a porridge or tapioca pudding-like texture. Garnish with toppings of choice, stir it all up, and devour!
