Quick Fix: Ten-Minute Thai Salad Rolls & Two Condiment Hacks

These Thai-inspired salad rolls are one of my quick go-to’s when I’m looking for a tasty snack or snacky meal that’s veggie-packed but not just your everyday salad.  Somehow everything just tastes better when it’s in some sort of wrapper, am I right?

This is a great opportunity to pack in a whack-load of raw veggies, the more colourful the better!  Sometimes I’ll throw in a few slices of marinated tofu or tempeh for some protein, but depending on how filling you want these little guys to be, that’s totally optional!

If you use a gluten free tamari in your dipping sauces, this easily becomes gluten free, and if you use Coconut Aminos or just a bit of salt instead of tamari it’s easily soy free too!  Holy moly, that’s exciting!  And delicious!

Thai Salad Rolls

3-4 sheets rice paper
2 cups shredded veggies: red cabbage, kale, carrots, mushrooms, zucchini, peppers, anything else you fancy!
1 green onion, thinly sliced
2-3 tbsp chopped cilantro
1/2 lime juiced
sea salt

Shred all veggies thinly with a sharp knife and/or mandoline.  Toss with lime juice and salt to coat.

To assemble: fill a plate or pie pan with warm water and soak sheets of rice paper one at a time until soft and pliable.  Lay sheets out on a flat, dry surface one at a time and fill each with 1/4 of shredded veggie mixture.  To roll, fold in short ends, then fold and tuck first long side over filling and roll up so it looks like so:

Condiment Hacks 

Two easy and healthy options to bottled sauces that would commonly be packed with refined sugar, sulfites and other preservatives.

Quick Chili-Garlic Sauce:

1 tbsp agave or maple syrup
1 tsp water
1/4 tsp tamari or coconut aminos (may want to cut back on sweetener w/ coconut aminos)
1/4 tsp fresh or granulated garlic
1/4 tsp red chili flakes

Combine all ingredients in small bowl.

Easy Thai “Peanut” Sauce:
1 tbsp nut butter (almond, cashew, peanut if tolerated)
1 tsp lemon or lime juice
1/4 tsp tamari
1/4 tsp agave or maple syrup
dash red chili flakes or cayenne pepper

Combine all ingredients in small bowl.

For a sweet raw option with an extra hit of dark leafy greens, roll this same filling up in kale, swiss chard or collard leaves!

  1. These do look great. I love anything in a wrap too but see-through wrappers is just the best! I've got to find rice paper somewhere.

  2. Ainslie — I couldn't watch the PETA video – the little calf's eyes in the still are already haunting me, but then I don't need converting. Those animals are as dear to me as my own pups. But I did watch the Alec Baldwin video — Thank you! I'd had one of those days and the belly laugh was just what I needed!

  3. Cheryl, I'm glad the 30 Rock video gave you a laugh, I sure needed it after rewatching this video, and the footage on Oprah the other day of the "humane" slaughterhouse. no such thing.
